Reader's Digest Heart Healthy recipe for Banana-Walnut Quick Bread:

1/2 c old-fashioned rolled oats

1/3 c walnuts, coarsely chopped

1 1/4 c all-purpose flour

1/2 c whole-wheat flour

2 tsp baking powder

3/4 tsp baking soda

1 1/4 c mashed banana (from 3 bananas, about 1 pound)

2/3 c packed dark brown sugar

1/2 c buttermilk

2 large egg whites

2 1/2 Tbsp walnut oil or extra-light olive oil

*Preheat oven to 375F, spray an 8 1/2 x 4 1/2 inch loaf pan with non-stick cooking spray.

*Toast oats and walnuts in oven on jelly-roll pan until oats are golden brown and walnuts are crisp, about 7 minutes. Set aside

*Stir together all-purpose flour, whole-wheat flour, baking powder, baking soda, and salt on a sheet of wax paper until well combined.

*Combine mashed bananas, brown sugar, buttermilk, egg whites, and oil in large bowl. Stir to mix well. Fold in flour mixture, oats and nuts.

*Spoon batter into loaf pan. Bake 50 to 55 minutes, or until a toothpick inserted in center of loaf comes out clean. Cool in pan for 10 minutes, then turn out of pan onto wire rack to cool completely.

Banana bread is OUTSTANDING with nutella :blush: dare i say yummo!

well just took it out of the oven and it smells really good. I'll be waiting a bit before I try any.

So what'd you put in it?

:lol: I just cut it up. It is pretty moist but it has an interesting bouncy type texture. I swear the loaf bounced when I tipped it out of the pan onto the cutting board. It tastes interesting. A little too much cinnamon for me but this is the recipe I used. I kinda changed one I found online

1.5c AP flour

3/4c splenda

1.25t baking powder

.5t baking soda

.5t ground cinnamon

5T egg whites

1c bananas, mashed

1/3c applesauce

1t real vanilla

2T flaxseeds

my wedding cake was banana cake with chocolate frosting.. it was yummmy!!!!!!

Oh my GOODNESS :o:O:O Was it banana shaped? Omg that sounds amazing.

I made a slightly 'lighter' banana bread for my dad once that came out really good, but don't have the recipe :( It wasn't all the substitutes though, just a lot less oil, egg and sugar than all the other recipes really :D

Come on it's good for you! I had pizza today you can definately have banana bread. It's FRUIT.

I miss being a kid and people (Grandma) baking for me :( Oh me...

it was heart-shaped and I made it myself... it was so nice and moist and delicious...

i mostly cook with the light land o'lakes butter who has 50 calories instead of 100 (normal land o'lakes). my recipes turn out the same as if I used the normal butter. and it's not like fake butter, it's still butter but healthier :P
