i liked the idea of artichoke hearts, tomato, spinach, and feta. tomato might make it watery if you do it a panini style. but if you leave it fresh, then fine! :)

i'm a huge panini fan. anything hot and toast with melted cheese inside really doesn't matter what else you throw in there.

maybe you could do a panini with peanut butter, jelly, sliced apple, cranberries, and a touch of honey. someone made that for me once and i was in heaven!
