sandwich ideas again

there is a large amount of people that have come in this week asking for paninis without meat in them. mainly on ash wednesday but I thought for my next few weeks open I would do meatless options on fridays. right now as far as meatless we have on our menu always roasted veg panini, tomato & mozzarella panini, and a plain cheese panini for kids. any idea for quick/easy meatless options? as a lot of you know I'm so over this now that I don't even want to attempt to think up ideas. I was thinking maybe something with artichokes or something. really only need 3 or 4 since I'm only open for a few more fridays.

oh god I had a tuna & avocado sandwich for awhile I wanted to barf everytime I had to open the tuna :lol:

what about a goats cheese and avocado panini with a little sundried tomato relish? or perhaps an egg salad panini with spinach? yum
