So I am filling in my DS-156K form and it wants "evidence of engagement to your fiance" and "evidence of financial support" can anyone give me ideas what to use for these?

Evidence of engagement is the fiancee letter of intent. Some consulates request an updated version of the letter you sent for the petition. Make a new one. Evidence of financial support will ne provided by your fiance with the I-134 and supporting documentation.

I am going to have the receipt for the ring, wearing my engagement ring, pics from our engagement party and then the letter of intent. But, the letter of intent should be sufficient. You will probably be bringing emails showing communication between the two of you, pick out a few that show you discussing wedding plans?

For a K-1 interview at a consulate, financial support documentation most definitley IS required. Do no tthink for one moment a visa will be issued without it.
