Just sent in the initial packet today to get the K1 Visa process started. We are a little worried because of two F1 student visa denials for my fiance and don't know if this will affect it.

I very much doubt it will affect it. Your choice to marry her is a separate thing from her reasons of getting denied a student visa. Good luck to both of you! I am a few months behind so will be watching your timeline for updates to see what I can expect for mine.
