I didn't go with her myself and I've left Japan, only my wife went to the interview, and I can only post review based on what she told me.
Long story short, the visa is approved after some extra waiting.
The question asked on the interview was pretty short,

She was really really bad in English, she told me after she answered the first question(based on translation, it's just where did we met?"), and she can't answer in English anymore, started conversation in Japanese.
We've submitted all documents under her maiden name, she then changed her name a month before the interview, she has my married name right now, and still gets approved for the visa, and interviewer added the her maiden name as middle name on visa based on what she told me.
Overall I feel like it was much easier than I thought, based on what she told me. It's Japan, how hard can they be?
