Per my fiance: The wait was very long, but the interview was short and easy, as we had provided all the requisite information. The consular official was genial and overall pleasant.
There is currently a delay on processing visas due to some sort of systems outage. We are hoping the visa arrives soon!

Overall took about 3-4 hours. Arrived around 7:00 AM for the 7:30AM appointment, which from other reviews you'll realize this has absolutely no meaning. The interviews seem completely random. Anywho, about 5 minutes outside, 10 mins in the 'holding tank?', probably 30-40 minutes to get the fingerprints done. Lucky for me I was able to go sit down, my wife had to do the tetris shuffle as they pack everyone into the queue. Really though, its a much needed lesson in waiting your turn that a lot of Vietnamese need. Another 40ish minutes watching random numbers called to submit paperwork. And then a good 2 hours sitting around watching interviews take place while waiting.
I went up with my wife and was not sent away for the entire interview. The entirety of it lasting all of 3-4 minutes. We had a woman interviewer and she was very friendly and seemed to make an effort to make my wife comfortable. She asked the basics. My husband was the one getting interview, but I came along. The lines are long and there is a lot of waiting. If you have a young child, they don't like it if you bring the child with you. There is a lot of waiting and you need to constantly look and listen for your number to be called. The numbers are not called in order. The interview wasn't too bad. They have a translator if you don't speak English. They ask my husband a few questions, but they mostly talked to me in English. We have a baby together, so it was pretty straight forward, no complications. Overall a good experience.

I attended interview. The worst part was the wait and the random order of the numbers kinda of like the DMV. I personally got confused with the nonimmigrant/immigrant visa signs because the K1 isn't an immigrant visa, but it is.
Questions were simple, but I don't remember because they were so simple. She was asked questions such as: "What does your fiancee do for a living? What do you do for a living? What was her birthday? How do you guys communicate?"
Consulate officer then asked that I come up and asked me questions in Vietnamese without the translator doing their thing and had to be answered in Vietnamese. The questions and answers didn't matter. It was a test to see if her aswer to how we communicate was congruent. I think it was because I was born and raised in the States. I can't read or write Vietnamese, but conversationally I have no issues. Officer had already had the white slip prepared.
