Arrived 30 minutes early and was admitted. I left my phone with my husband who was waiting at a nearby coffee shop. Inside I discovered that everyone else who was there for a visa interview had brought their phone with them. Apparently I could have too.
The interview took about an hour and was relatively easy. Even though we had paid to have New Hampshire review our i-864, Taipei insisted on doing their own review. They did not tell me immediately that the i-864 was or was not approved. They only said my visa would be delivered in three days.
All of the instructions said I should bring many original documents and a copy of each for the Consular Office to keep. Instead, they held back several original documents, including some of my health exam documents. But everything was returned to me with my passport and visa. I wasted a LOT of paper making copies that they did not want. (I wasted a lot of time too.)

My fiancée, an OFW (overseas Filipina worker) followed all of the instructions to the letter. When she arrived at AIT, she went through security without a problem. Then to the first screener, the one everybody is terrified of. She scrutinized the documents and found them to be in perfect order. She was then sent to the final interviewer. He was extremely nice to her. She was asked the same question many times throughout the interview. He was satisfied and is granting her visa.
My fiancée, being a Filipina, did not experience any discrimination from the Taiwanese people, in or out of the embassy, ever. She has always been treated with the utmost respect and she demonstrates the same.
My suggestions are:
1. Make sure it's a real relationship. The embassy is really screening for the fakes.
2. Ensure your documents are in order. AIT provides you a list, follow it precisely.

Very. Smooth and quick. I did feel confused when they asked me ticket booking. I didn't think I was recommended to do that before approved. But everything went very well. The interviewer was friendly and smiling.
