My wife interviewed for a fiancee visa in January of this year. The experience was a bit mixed, both good and bad. I am a very proactive guy so was always trying to stay ahead of the process, so found it a bit frustrating because we were told one thing and many times something different would happen:
1) we never got an interview letter (letter confirming her interview needed to enter the embassy) from the Embassy for her to enter for an interview. After about 6 weeks, I wrote the embassy several times and they finally confirmed her interview in an email. It took about 3 months from the time the application was sent to the embassy until we got the interview appointment letter
2) You need to have photo copies of ALL documents or you will be turned back. My fiancee forgot to photo copy her police report - one piece of paper and a photo copier was in sight. But they would not let her photo copy it. Fortunately she was rescheduled for an interview a week later.

Disclaimer: This is not really a review, but a request for information to all fellow Nepalese applicants and petitioners.
How long usually does it take for interviews to be scheduled at Nepalese Consulate after the case is completed at NVC? I don't have priority date restriction (or visa number restriction).
I very much appreciate any information or experience you can share. I'm asking because I want to plan my trip to Nepal in a way so we can fly back together.
I will post embassy review after my wife completes the interview.

My husband was approved at his interview. It was surprisingly easy. The didn't ask any questions about our relationship and only looked at one photo.
However, it turns out that Nepali people need a birth certificate issued by the ward office, rather than by the hospital. He won't be able to get his visa and passport until he brings in a newly issued birth certificate from the ward office.

Interview was basically based on if my marriage was legit. My wife was asked few simple cross questions, like the ones you'd know if you were really married, like city address, how the weather is like there. The most important thing to show in your interview is your photographs of wedding and you being together.

The Nepali staffs were not help full. However, the American staff who took by interview was so nice and polite, he just asked the couple question looking at my photo Album that I have carried with me. very simple . But the lady whom I submitted my visa paper works was soo mean. She was supposed to give me the confirmation letter for my interview but she did not gave me one and when I wrote the embassy saying that I have interview date given but not the letter that lady was fire up. She treat me like enemy on the day of my interview. I was soo nervous but the person who took my interview was very nice.
