That's not 100% true, Austin, TX does not have a field office so all interviews take place in San Antonio, but there are naturalization ceremonies in Austin

You will eventually have to do the interview and oath at whatever the nearest field office is, so just find out whatever the nearest one is, that is probably it. It's not uncommon for people to drive 1-2 hours or more to get to their field office.

Service Centers are selected seemingly randomly (it's based on whatever USCIS load balancing rules they have in place).
Field Offices - which conduct citizenship interviews - are based on your zip code.
