Chiming in with my two cents, because our case was incredibly similar - minus the age gap. We also met only once for 3 weeks. Everything went smoothly, the visa was issued today. I'd still suggest attaching plenty of evidence to your I-129F. Chat & call logs, gifts, ... That's what we did and I believe it played a huge role in why we were successful.
