We just got an email bumping our interview date from Jan 30 to Jan 12!!! Confirmed that with the consulate, and called to reschedule the medical exam to be done in time. Holy cow y'all, I'm shaking!

I can't help with the question about scheduling, but you should have copies of all your docs; they will review and keep the copies, and return the originals, from what I understand.
