For Madame Cleo
Stacie's Flan (and yes, I gave it my name)
Preheat oven to 350 degrees
3/4 cup sugar for caramel
1 can evaporated milk
1 can sweetened condensed milk
1 cup heavy cream
1/2 cup milk
6 eggs
2 tsp vanilla extract
Melt sugar in saucepan - will take about 10 - 15 minutes. Do not let it burn. Also, no matter how tempting DO NOT even think about touching sugar. You WILL burn yourself.
Put caramel into a 2 1/2 quart ceramic dish (I prefer the French White Corningware - it has worked well for me) swirl the caramel around the dish allowing the caramel to coat the bottom and sides of the dish. One suggestion, so that the caramel spreads more evenly, place the dish into hot water for a little bit - dry well.
In bowl or large blender, mix all six ingredients well. Pour into caramelized dish.
Create a hot water bath and pour the water about 1/2 to 2/3 up the side of the ceramic dish.
Bake for 65 - 75 minutes. If you notice that it is still a little jiggly, turn your oven off and leave it in there for a few minutes more. It will finish cooking with the residual heat. Remove from oven and let cool.
Once it has cooled, place into refrigerator for at least 3 hours. When you go to unmold the flan, carefully pass the sides with a knife. Use a decent size platter to invert your flan. Flip the flan with the platter. The flan should slide down to the platter. Remove dish and flan will be ready to serve. Slice and serve with some of the caramel.
*Note - if you want chocolate flan, add 6 tablespoons of good cocoa and a teaspoon of cinnamon to the milk/egg blend. It is divine!
Oh boy oh boy! that must be rich (flan). I just used condense milk, evaporated, 10 egg yolks and vanilla. When I first tried it here, I took me almost 2 hrs. I didn't realize that we are in a high altitude where baking needs more time. Now, I kinda estimate the time and just increase the temp.

I'll admit the first couple times out were scary but I just tried to stay calm and not raise my voice even if I was scared.
If I had it to do over, I would hire an instructor for the first couple of times behind the wheel (where they have a brake on their side of the car too!! lol), then start instructing her after she's a bit practiced.
Now she's just too cautious, I need to teach her to be a little more aggressive (but happy it's too cautious than too aggressive), but I hardly ever feel like there might be an accident anymore.
Now she's pregnant though, and I'm not sure how much longer I want her to drive, for the safety of her and the baby.
I think it's ok for her to drive even if she's pregnant. I was driving before and after I gave birth! That was actually the reason why I needed to have my CA license beacause my PI license expired. And it's hard for my husband to drive home if there's an emergency since he worked in LA, 60 miles away from where we lived.
For me, I grew up with a family of drivers and mechanics. I literally helped my Dad overhauled our car when I was about 10 yrs old. So driving was never an issue!

The title of this thread sounds insulting to all filipinas...as if you are saying or you sounded that filipinas are not capable to learn or can't be taught how to drive. If your wife is a filipina and has the difficulty to drive, don't generalize that filipinas are like that. I would rather suggest to rephrase this title of this threas to Can "MY WIFE"... instead of Can "A FILIPINA". Please be sensitive. (To the moderators: What do you think about this?)
I am a Filipina. I learned to drive and got my driver's license here in the US thru my hubby who taught me how to drive. We did not hire any professional driving instructor.
Filipinas are not excluded on the ability to drive a car or be taught to drive. Learning how to drive can't only be attributed to the learner's capacity to learn but to the teacher's/ instructor's skills to teach.

Maybe those Kanos looking for Filipina should look for one who has DRIVING SKILLS as one of the qualities they are looking for!

I had my driver's licence from the Philippines and was glad California allows foreign/visitors over 18 years old with a valid driver license from their home state or country may drive in California without getting a California driver license as long as their home state license is valid.
I remember, when my older son had a school program and the parking area was FULL! We were asked to park on nearby CITY PARK for more space. I saw there was a just enough space for me to park near the school, so I asked the police if I can just park there instead coz I was pregnant with my second son. He told me if you know how to do parallel park then it's yours. As a Filipina who was taught how to drive, I made it! The Police went to me and said, I did a good job! He told me, not most AMERICANs know how to do that!

I, too, experience these type of rudeness at work, not by my American co-workers, but 2 of my superiors. They long immigrated here from Pakistan (about 35 years ago, no offense meant, I am just telling my own experience) and they seem to think they are better and wiser than most people here. I work as a scientist in a research facility and sometimes they would openly embarrass me by saying things against me being a Filipina. They said that Filipinas are always scheming, always trying to do sneaky things to their advantage, and that they can't be trusted. Why the eff did they even hire me? If this goes on for too long, my tenure in this company will be cut short. I don't think money is worth all the agony. I should have listened to my gut instinct when they commented, in a panel interview, that "Most Filipinas who go to America either work as nurses or doing nails." Then one corporate lunch, a superior took me aside the parking lot and told me "See.. Years from now you'll progress and be the head of the research dep't., look at her (pointing to a Filipina, apparently an acquaintance of his, standing nearby, with a Burger King uniform and name tag), look how lucky you are. You sure don't to be like the rest of them."
After working my hours, I hurriedly went to my car to leave the company premises and I can't help but cry. I am so pissed. I don't think I can stay in a company with these kind of classless people.
ETA: I am suffering in silence too, and I am at my wits' end.. It will soon be over, I just so hope.
I hope you can find a better opportunity but I think you're right - you'll run into ignorance and bigotry in just about everywhere you go, but at least some places it isn't accepted or tolerated.
