Just wanted to update this.
I submitted the affadavif without any tax info or even income info, and our application was accepted. I think they just wanted my signature on that document to assume financial responsibility should need be.

DCF is fast but 3 months is pushing it big time.
He can visit during the process, he will interview in UK if you go this route.
