It's good that you're anticipating this. I'm sure that with the right set of evidence you can get approved.
I would just be sure to go the extra mile in everything. If you have a home in the USA, put both names on the lease. Save your phone and Skype records, and of course airline boarding passes.
I don't know how you plan to handle money, but try to combine that as much as possible. If she will have excess funds designated for long-term savings, send them to the USA and put them in a joint account. (I've found xe.com to be the best option for international fund transfers bank-to-bank.) If you will be paying for her expenses while overseas, get a USA based credit card with no foreign transaction fee and have her use that.
If you are scheduled for an interview, she will definitely have to attend. It's not really a problem to get it rescheduled if you need more time for her to come home. I've never heard of it being done, but I do wonder if USCIS would permit a remote participation by Skype or Facetime.

Ok, good When you said "we can't", it sounded as if you wanted, but weren't able to for some reason. Being from Europe, I know that your wife's major is a tough one and she does need the experience. I wish you both all the best and hope everything works out in the end!

Hi, No I'm not. I still didn't graduate yet, and I will graduate in a while, I can't ditch everything again and start from the beginning one more time, we are getting old lol and we must start building our life seriously now. Since she is leaving just for a period of time and for a good reason, we can manage that and visit each other everytime we get a chance.

The good news is that they do not give a lot interviews for ROC applicants. However, living separately could possibly trigger one. If you submit plenty of evidence of your marriage though, you might be ok. If you are scheduled for an interview, your wife will need to return to the US long enough to attend with you.
