I believe it is the Affidavit of Support that is need to be notarized and not the ITR

Since the OP is in the US on a K-3 (which is normally valid for 2 years, good for multiple entry), she may get the EAD without applying for AOS. However, her EAD will expire after a year and will need to be re-applied. AOS must be applied within 2 years or the applicant becomes out of status.
