Then you don't really want to bring her to the US.
Look, you may not be trolling, but let's be honest here. Your application to bring your fiance over takes up valuable resources from USCIS. If you don't even want to *meet* her, why do you want her to come to the US? What's the point? The process is expensive, time-consuming, and people who *genuinely love each other* have trouble enduring it. And you're not sure you want to meet her? Financial difficulties notwithstanding, this is absurd. She lives in a visa waiver country; you are blessed by the fact that she can actually travel here freely. Do not waste your money or our government's time with a visa petition unless you're actually invested in the relationship.

I got the same NOA hard copies as you did, never received the one for I-485. We've had some trouble with stuff being send back to USCIS (see my timeline below). We just got back from a weekend away and found the biometrics letter in our mailbox, for I-485 and I-765. So even though I never got a NOA fir I-485, they are still working on it. I was driving myself crazy about all this, but am getting to the point where I'm realizing, there is nothing we can do but wait.
As for the walk-in for your biometrics appointment: you have to wait until you get your appointment letter, once you have that you can try to go to the locations (with the letter!!) and see if they let you do a walk-in. Not all locations accept walk-ins though, and opinions seem to vary as to how much it really speeds up the whole process.

Because she went back to D.R and you have clear intent to not only marry but for her to apply for a greencard and immigrate to the US, unfortunately AOS is not an option for you anymore. She is allowed to enter the US with her B2 visa to marry you, but what she cannot do is enter this country with a non-immigrant to marry you AND stay to immigrate. That is visa fraud.
What you can do is have her come here in June, get married in the US, and begin the CR-1 spousal visa process when she is here. She can remain in the US for however long she is authorized to stay under the B2 (max. 6 months), but when that period of authorized stay expires she has to leave, return to DR and wait out the CR-1 process there. She will also have an interview at the local US consulate. There's a good guide for CR-1 process here on VJ which will outline the entire process step-by-step.
EDIT: Sorry about the confusion - just noticed you have K-1 listed in your profile..and now I am a bit confused. Are you applying for the K1 visa? Is she going to enter with the K1 fiance visa in June, and not the B2? If that is the case, forget all I said above.
