Did I potentially goof this up

Timeline

Just before thanksgiving I sent off the I-751 I believe it is (remove conditional status) my wife's card expires 1-27. Our service center is the Texas service center. Our local service center (for biometrics) is Memphis, TN. She will be leaving Dec 9 - Jan 13 or Jan 9th (still not sure yet) I have not even got an NOA yet (I assume that should be in this week)

How does the whole appointment thing go? With her being gone that long (I will be leaving Dec 29) Could we potentially miss out on our biometrics appointment? Or do they have US call and set up her biometrics appointment? Also how much time in advance do they typically give? If she is gone and I get the letter and it says she has to go say Jan 3? What do I do? Can I call them to reschedule because she is out of the country. Also, what does she have to do to leave the country with our little ones?

on the NOA for the bio there's a provision to reschedule the appointment
