We finally received word that our case has reached the NVC. Do they contact my fiancé by mail or email? We didn’t put his email in our I-129F petition, and he has had to move apartments since then. 
Should I submit another NVC inquiry with his new mailing address?

NVC does not mail or email K-1 beneficiaries so updating his address won’t do anything. They only forward the file to the embassy. Just keep contacting NVC every week until a case number is created and the case is released. The polite version of "are you done yet are you done yet?" That's what I'm doing.

But the embassy does mail the beneficiary so it's best to get it updated while at NVC so the embassy doesn't receive it with a wrong address.  Although it may make sense to do that after the case number is assigned, others have recommended to combine the request for case number and updated address into a single inquiry.
