K1 income requirement - foreign income online?

Greetings, everyone!

We had a quick question about the sponsor's income requirement for the K1 visa. I am the sponsor, an American citizen working for an international organization in Vietnam. My beneficiary is Vietnamese and we have already submitted the I-129f. My work can be conducted completely online, and I would like to continue working for this organization for a year or so after moving back to the US. 

My salary for this job is well above the poverty minimum for a household of two. If I make it clear that I would be able to continue working in this job remotely from the US, do you think I would be able to meet the requirements for the affidavit of support for K1?

Timeline

I imagine you will need a letter from the company you are working for that you are still being paid and what the amounts are. As long as you can prove that you are working and still being paid you should be okay.
