Thank you both. I’m not sure what he meant either (and since I thought I understood what he was saying I didn’t ask for clarification at the time ), but what I’ll do is I’ll call USCIS at some point next week and ask them to explain the abilities of the parole stamp. He probably meant what @geowrian said—that if my green card wasn’t through by the 1 year anniversary of the date of my parole stamp AND whilst my AP is valid, I can cross the border and have another one issued. Although I’m not sure what I’d need it for since I’m allowed to be here whilst the AOS is pending.

Actually, I think this goes Part way to explaining it even if it isn’t very official: https://www.trackitt.com/usa-discussion-forums/i131/138095455/renew-ap-needed-paroled-until-june-2009

I think the bottom line is that CBP and USCIS are singing from different hymn sheets when it comes to this situation. It seems CBP is concerned with the person leaving by the date on their parole stamp whilst USCIS gives authorisation to be in the country whilst an AOS is pending—something which CBP might not be familiar with all of the ins and outs of. This has probably just been the result of a confusion between two related but not entirely identical procedures.
