It is possible, but how do you plan to support the beneficiary during the six months he or she cannot work?  And how will you provide health insurance for them?

 

The consulate considers the totality of the financial circumstances  when evaluating the risk of the immigrant becoming a public charge.

I haven't worked for a few years now, and relied on buying and selling items locally for income. I have assets, but no way to prove my income. I don't have tax return statements. But I am able to get a job soon and in the timeline I am thinking, I will be working there for 2 or 3 months before I will attempt to petition for the k1 Visa. The job includes health insurance as a benefit. Will showing just a couple months worth of pay stubs and my co-sponsor be enough?

It is possible.  Again, it will be looked at as part of the overall picture.

Also, you will need to get your tax filing up to date, or be able to show that you were not required to file.
