I haven't worked for a few years now, and relied on buying and selling items locally for income. I have assets, but no way to prove my income. I don't have tax return statements. But I am able to get a job soon and in the timeline I am thinking, I will be working there for 2 or 3 months before I will attempt to petition for the k1 Visa. The job includes health insurance as a benefit. Will showing just a couple months worth of pay stubs and my co-sponsor be enough?

It is possible.  Again, it will be looked at as part of the overall picture.

 

Which consulate?

 

Also, you will need to get your tax filing up to date, or be able to show that you were not required to file.
