Hi, I Have my G325A and I-129F mostly completed(and will have my Fiancee's G325A in hand soon, once the package arrives :D)

and i have a question on the "Employment" section of the G325 -

I've had the same job for the past 6 years, but in the meantime, i've had several other part-time jobs (each less than 6 months), do I have to list them all, or can I just fill out for my Full-time Job?

Thanks in Advance :),

I would list them on the form.

Also since you ar just starting the process you may want to visit and join "A Candle for Love" that site specializes in Guangzhou and the ins and outs of the visa process through that particular consulate. The Consulate even posts to the site from time to time.
