Hi,

Me and my (American) fiance aren't going to start the visa until around July, but we have a potentially dumb question which we have been worrying about.

The minimum requirement is a little over $20k, and she earns $25k as of very recently. Her previous salary has been less than the minimum requirement. Will that be an issue? 

and secondly, is $25k too close to the minimum income amount so it might mean our visa is denied?

It is 125% of the HHS poverty guideline for the family household.  Not 125% plus some margin

London is fairly easy.  They may or may not want to see anything other than the most recent tax return.  Get advice on this from people experienced with your embassy

I had my interview in London and they accepted a letter from my fiance's boss starting his salary then his most recent tax return (This happened to be from a different job actually) and we had no issues
