People who submitted from November - December 2016 have been getting responses.... Some getting RFE and some getting approvals. My date is December 29, 2016 and i am still waiting. There are people who submitted in November 2016 that are still waiting for responses as well. I have not seen any January 2017 approvals or RFE yet.

I'm preparing my RFE to prove the extreme hardship of my husband, he is currently living a bad financial situation in the States and  we can prove it; I just had an offer job from an American company, I'm mexican I'm industrial engineer, so what do you think about send this job offer to prove that I can help my husband to make his financial situation better when they approved me??

Yes you can show that as a proof that if your waiver is approved you can help your spouse with his financial situation........ But keep in mind you have to make sure you provide all requested for the RFE ......... And show strong financial hardship and any other hardship your spouse is going through too.
