I petitioned my wife and her (our) son who is not mine by blood...only by name, so he does not have a US passport as does our daughter who does have a US passport.

We received an email for the interview date, but only for my wife...no email for our boy...so we don't know what to do as we cannot separate our family.

Did you file two separate petitions for them? Was your sons petition approved by USCIS & sent to NVC?

Did you get a case complete from NVC for both at the same time? I would think the next step would be to either contact the embassy where your wife is having the interview or contact NVC. Hopefully they'll be able to do their interviews at the same time or within the same month. The visas are usually valid for 6 months from the date of the medical exam I believe...so as long as they both receive their visas within a few months of each other, then they'll be able to travel together. Good luck, I hope you can call & get some answers.
