My wife and I are wanting to travel with our son to her home country, but we are unsure if we are even able to.

My wife came to America with her passport in her maiden name (as most do) and then changed her last name to match mine.

Then we moved to another state where changing your last name is a far simpler process than it was in my former state. So I changed my last name (as I have been wanting to for a very long time, even prior to getting married).

So now:

My wife's passport is in her maiden name

Her green card is in my OLD last name (because USCIS screwed up and didn't fix it as they were supposed to before mailing her green card, and now we are waiting over a year for a replacement card... literally over a year).

Her driver's license is in our new, shared last name.

Our marriage certificate has my old name and her maiden name.

My passport is in my old last name.

My driver's license/social security is in my new last name.

Our son will be getting his passport in our new, shared last name.

Obviously our hope was that USCIS would send us a replacement green card QUICKLY so that we could simply apply for her passport to be in the new name... so that her passport and green card match names and match my name. But as I said, it's been over a year... so we can't wait any longer. One of her relatives passed away during us waiting for this to update and they never even got to meet our son. We don't want that to happen again while continuing to wait.

We've called USCIS so many times and they are so incompetent. They even sent us an email saying that our case is way outside of processing times but there is no information they can give us and to basically just get over it and wait without any idea of what is going on.

Is there any options we can pursue?
