Update: so we sent in everything they requested and received notice that they (the NVC) has received all requested documents then they told us we needed to provide a police report from England on my spouse since he lived there for some time so we paid 80 dollars for that report awaited it's arrival from England we ordered 2 but the one that was supposed to come to me here in the states never came luckily my husband received the 2nd one he ordered in ghana any how they received the police report on 09/20/2016 they told me it would be approximately 6 weeks before we would receieve a response it actually ended up being 8 weeks but today we have received a letter informing us that they have everything they need and we are currently in a queue to be scheduled for an interview.

Question: does anybody have a general idea on how long it will take to receieve that interview letter?

Interviews are scheduled upon availability, any time from 2 weeks - 3 months. Just make sure they have your email address on file so you can get the notice through email which is quicker than snail mail. You should check your country's spreadsheet to see estimate of how long it's taking to schedule interview. Alos, you can click on the Ghana map on your profile and check "embassy info" for estimates too. Congratulations and goodluck!
