I (the US cit) am in the process of submitting the AOS for both of my parents, and my fiance will be joint sponsoring the AOS since I do not meet the minimum income requirement. The fiance and I have been living together for 7yrs and have 1 child. Hence, the confusion which form the joint sponsor and myself need to submit.

You will file an I-864 and include financial evidence and your fiance will submit a separate I-864 and include financial evidence. Since he is not an immediate relative, he is unable to submit an I-864A as a household member.

Thank you for the response teeak! Do you suggest not to get married until after the interview (we're thinking of civil ceremony next month), or it would not make any difference?

It won't make any difference if he earns enough to sponsor them both. The perk with being a household member is that he would be able to combine his income with yours to meet the minimum requirements but, if his income alone does that then it's not necessary.
