I have done some searching in reference to this issue but could not find the answer I was looking for.

So quick question. I just received my Biometrics appointment letter on the 23rd of May, however the date they had us down for 31st of May is bad for us and we are not able to make it. On the 24th of May I sent the letter back to USCIS to have them reschedule. I still have not received the letter with the new date and was wondering if I should be calling in to see what's going on or should I give it another week or so to verify they in fact did receive my letter requesting to have my biometrics re-scheduled?

Thanks in advance.

Did you send the letter with any kind of signed-for, guaranteed delivery? If you did, you can check the tracking number to see if it was delivered. If not, then I think I'd call them to make sure they did receive it.

Depending on how busy they are, it can take a couple of weeks for them to re-issue an appointment. But as long as they have your letter and you have proof that it got to them, there won't be a problem with them saying you didn't show up for your appointment. Walk in works too if you have free time one day to do that. :)
