The I-864 asks both what my employment is, and if I'm unemployed.

I am employed, in Canada, but my Canadian income cannot and will not be used to satisfy the income requirement, so it doesn't need to be listed. I can't mark unemployed because that would be false - so do I just leave everything blank and explain my conditions in a letter?

1) Domicile is arguable, so I'm considering arguing that I am still domiciled in the U.S. (I think that's what we did the first time, after two years in Brazil) since I still maintain a U.S. bank account and our transfer to Canada was temporary, as evidenced by expiry dates + corporate intent letters

2) You can also prove your good-faith intent to re-establish domicile no later than when the recipient moves to the U.S. --- i.e., move back at the same time

We have joint sponsors to satisfy U.S. income requirements.

The content available on a site dedicated to bringing folks to America should not be promoting racial discord, euro-supremacy, discrimination based on religion , exclusion of groups from immigration based on where they were born, disenfranchisement of voters rights based on how they might vote.
