As of now the only open appointments are May onwards. I am trying to wait for late March or early April slots to open up. Should I book the May now just to be sure or better to wait for slots to open? Once I schedule my interview I won't be able to see the other available dates anymore unless I cancel it.

But the alternative is you wait and nothing opens up for the time you want, and you then lose the May spot and wait even longer. Book your appointment.
