My AOS was reviewed and we got a RFE for some info on my co sponsor’s 864, i was unemployed at that time so i stated that, but now that i have a RFE with a easily correctable issue I’m wondering is i should go into filling out a new I864 for me, get a job letter, get pay check stubs, etc, and cancel my co-sponsor?

or should i just make this simple correction and continue as if i don’t have a job...I spoke to NVC and they didn’t sound like they really cared, they said if i send a new I864 they'll review it ..

Will they at the interview look into my IRS records and see I'm working?

No, they will not look in your IRS records. They will only look at what you sent them. When you address the RFE, make sure you give them EXACTLY what they are asking for. You can send supplementary information showing you are working now, but they would likely request a co-sponsor anyway because you have not been in your job long enough. You may have the intending immigrant bring updated information to the interview, but they probably won't look at it. Just concentrate on addressing the RFE for now.

15 May 2014: Received formal residency/work permission (GNIB card with Stamp 4, one year renewable) for the ROI

I doubt they will even ask, but if they do, you should be ready. Go ahead and bring copies of your pay stubs (make sure they are as recent as possible). However, you are really qualifying based on your co-sponsor. They may not ask to see your information at all. It will help that you are now working, but it is not likely to matter in your case.
