Do the letters/statements re intent to be married have to be notarized?

No, just signed and dated

The only document that needs to be notarized is the I-134 Affidavit of Support.

i sent 2 copies of each: a hand-written letter and a computer printed one, with original signatures...my fiance submitted one of each kind

those werent notarized
