I have my fiance's letter of employment dated January 15th. Too old to present at the interview coming in the next 2-3 weeks? I have his recent paystubs.

Hard to say, it all depends on the determination of the IO at the consulate/embassy. It certainly would be a tough break to get an RFE, with the resultant delay, at this phase of your immigration journey simply due to a perceived "stale" document.

When we had out interview, the letter of employment was 6 months old; we had recent paystubs.

At the interview, they didn't look at anything and had 3 questions in a lapse of 5-10 min. That was all. Approved. This was almost 2 years ago though. I had maintained employment with same company for about 8 years at the time and had more than enough in financial support for my wife.

Warszawa is a relatively easy embassy. Have never heard of anyone denied there, but of course, the cases I know of are limited to VJ and a few outside VJ.

If you can get a newer letter, great, but I wouldn't sweat if you didn't. It is hard to time things properly with the delays USCIS had recently, and they know that; a 3 1/2 month letter is not that stale.

<edit> Oops, just realized you mean interview for naturalization?? Or is it K-1 (since you say fiance)??
