Wife Did the whole AOS package and just recieved her EAD.

She already has a social security number from her J1 Intern visa. Can she just start working? Does she need to update information at the SSA telling them about her new work author? Does she only need to go to SSA only after getting green card?

Her social number will not change, she just shows the EAD to her employer with the SS Card. After getting her green card - if it the (SS CARD) contains a stamp no work without DHS approval, upon showing SSA the green card they will issue a new one with it removed. Also if she has a name change on the green card it will be adjusted as well.

In Arizona its hot hot hot.
