So my fiance and I use Kakao Talk and Line. I am able to export the chat logs, but most of the chats are in Japanese or Mandarin.

I know that any document must be in English, so am I suppose to translate all of it? There are more than 30 pages in length.

It is likely not necessary to include or translate all of your chat logs. The site's step-by-step K-1 Visa Guide says it best:

…."Provide a reasonable amount; two to four of each type. Pick a range of dates up to and including the present."…..

Try to provide a balanced mix of all of the types of evidence listed. What is your interviewing consulate? There are some consulates (i.e., Guangzhou) where "front-loading" your initial petition with as much of the various types of evidence is prudent. Check regional forums for specifics.
