My interview is set next week in Islamabad, Pakistan. It sucks that they give you a weeks notice! But all the letter said to bring was: 1) the letter they have emailed me 2)any proof of engagement, or that we still talk. What else do I have to bring? Obviously the medical records will be bought as well. Do I have to bring the packet 3.5 which I have sent the embassy 4 weeks ago? What if I dont have copies of everything? Shouldn't they already have all the documents there with them already? Has this happened to anyone else?

There should be a checklist in your interview letter. It tells you what you've already submitted. If you had submitted copies, take all original documents with you. Take all evidence of bonafide relationship and of course everything else that is mentioned in the letter and you have in the posted in your post.

So I'll be taking the medical exam results, as well as some proof that we are engaged, and we still talk to each other (printout of facebook conversations). That's pretty much all the letter said to bring. But I'm seeing on other websites that we should also bring our documents, which we had sent as part of our packet 3.5 to the embassy a couple of weeks ago. Is this a requirement? What if we did not make copies of certain documents, such as the police certificate? or the original affidavit of support which was sent as part of the packet 3.5? They should have all the papers, since they approved us, and the person who will be interviewing us, would have the papers in front of them. Now even though they didn't ask for any of this in my interview letter which I just received, do you think they will be strict with us and give us a hard time that we didn't bring along every single paper, which we sent to them a couple of weeks ago, since we didn't make copies of every paper? Any experience in this type of situation?

It's not really required. If you don't get an RFE or if in the email/letter you get with the appointment date they don't tell you that there's something missing,you should be alright. If you sent copies of forms/documents with your packet 3, then you do need to bring the originals.

I made a copy of my packet and brought it with me just in case and I wasn't asked for any of it. I even brought more evidence of relationship (I had already sent a ton) and they didn't really care for it...I guess they had already seen enough =P
