Traveling during pending visa

Timeline

I am currently working for a company that sponsors my working E-3 visa. It has been pending for over 5 months now and the status is now "evidence needed", where my company needs to provide actual proof that I am eligible for my position.

I just received an emergency family situation at home and must leave the country for two weeks. What if the pending status is still going out while I travel? Will my visa be denied right away? Will I be able to return to the country and still have my visa process be completed? Can I offer any documents while my status is pending as I travel?

Please advise, I am so scared while candles burning on both ends.
