Does relocation affect the K1 process?

We just filed for the K1 and have not even received our NOA1 yet. I just found out a couple days ago that the firm where I work will be downsizing and the bulk of us will be layed off. Of course it is not official yet, however, the source of the info is reliable so I have started making plans on how to carry on in the coming months.

Due to the high rate of unemployment in Europe generally and Italy particularly, I have decided to move in with my sister to save on rent while I find employment. She is based in Scotland. We had filed with Florence Italy as out consulate of choice (I am based in Italy). The truth is, if I loose my job, my savings may not be enough to keep me here in Italy indefinitely and I don't want my fiancè to have to take care of us midway, so moving in with my sis to strech my saving while I search employment seems the better option - since obviously I cannot move in with my fiance and await the process.

My question is, will the change of location, therefore change of consulate of choice affect our petition? Do we need to inform them of the change or do I simply come back to Italy for the interview when the time comes. Sounds like an ignorant question I know, but we are clueless so consider it a sincere question. We want advice on what to do and how.
