I'm a bit confused about when to exactly file for my wife's removal of conditions. The USCIS site says to file within two months of our wedding anniversary(August 7th), but my wife's green card doesn't expire until February. So should I file before our anniversary or just some time before the card expires?

and also...

what exactly do we need to include with the application besides the fee? do I need to show that I can sponsor my wife just like I had to when we had to apply for the visa and the green card? what about evidence that states our marriage is for real and not for the green card? anything else?

USCIS instructions state you can file 90 days before the expiration of the green card. Not your wedding anniversary. Have a read of the removal of conditions instructions pages again. You also need to look at the ROC guide on VJ for what to file etc. You need evidence spanning 2 years of your marriage.

Look at the expiration date on the green card. Then count back 90 days. That is the earliest date to file.

Your I-129f was approved in 5 days from your NOA1 date.

Your interview took 67 days from your I-129F NOA1 date.

AOS was approved in 2 months and 8 days without interview.

ROC was approved in 3 months and 2 days without interview.
