I was wondering if one is allowed to go to school in America while their AOS is still pending. Can i use my EAD to go to school? I am thinking of working and hopefully enrolling in school at the same time for a better job placement in future. Any advice?

You need to talk to the school and find out what their policy is. Every school and state is different.

Your interview took 67 days from your I-129F NOA1 date.

AOS was approved in 2 months and 8 days without interview.

Every college and university is different.

Some may let you with just the EAD but will consider you an international student and you would have to pay higher tuition and fees.

Some may not.

You will have to call the school you plan to attend.
