We are just going to have a very very small 'wedding' (like 10 people?) in those first three months then after that maybe around January 2014 we will have the actual 'big wedding' that we want - only reason why we cant do that the first time around is because I want to give my friends and family in Australia as much notice as I can

That is what K1-ers do: small wedding first, later big ceremony for everyone.

In regards to your other question/ comment.

I believe there is no stated maximum number of days per year someone can be in the USA on the Visa Waiver Program or stated maximum number of times someone can visit the USA on the VWP in a year - they just have to leave every 90 days.

However, US Immigration watches for people who try to illegally live in the USA using the VWP, and the "180 days per year" is a rule of thumb they can use.

Multiple long trips in a year - especially if they closely follow each other - are a red flag.
