I assume I can go back to work once I get email approval of my EAD?

This would be a company I have been working with prevoisly. Any reason to wait for "card-in-hand"?

The only reason to wait until the card is in hand would be if that's the way the employer wants it. Otherwise, if you can show that you are employment authorized - using the e-mail - you have 90 days to show the specific required authorization document - the card - to the employer.
