What if you worked 2 jobs over 8 months in the year of 2011 and had a total income barely over 125% for a 2 person household, but the second job is your current job you've had for almost 6 months and the yearly pay is almost 3x the 125% level. Would you still send your 2011 tax returns with all these other documents of proof? A letter of employment, pay stubs, bank statements, W2's, IRA statement, and stock statement?

You still need the tax return with W-2s, letter of employment, and recent pay stubs. You do not need bank statements, IRA or stock info UNLESS you are in need of listing assets to meet the 125% mark. If you are not needing or wanting to list assets, then leave that part blank. No need to send evidence of assets if you do not need to list them.
