Over the last few weeks Pui has made a green mango salad that I have really liked. What she has put in it is peeled green mango, peeled carrot, fish sauce, shallots and or onions, a tiny amount of msg, hot red pepper flakes, and chili powder. I know you can add pork and other things to it but that is all we have added. I know shrimp paste can be added as well but I did not like it, the next time she makes it I said I wanted to try it again with the shrimp paste.

Just curious if anybody else has any favorite thai dishes they are liking at the moment or any other dish.

12-20-2012 Pui returns from Thailand.

12-21-2012 We send the RFE back for with original birth certificate along with a new certificate of translation(I had to wait for her to return for her to sign)

12-26-2012 text and email they have received the RFE.

12-29-2012 Appointment for biometrics is 01-23-2012

01-13-2012 AP is approved.

01-23-2012 Biometrics appointment. Later during the evening the text and email saying the EAD is approved.

01-31-2012 EAD/AP combo card arrives.

05-22-2012 Email and text card is in production!

I enjoy the green mango salad, but prefer Som Tum, with the fermented crabs and pra ra, the stinkier the better :) It's also really good with those little dried shrimp, they're not quite as strong as the shrimp paste.

You can make that mango salad with Green apples too, i like that almost as much. Fairly relevant since they're will be boatloads of those in the next few weeks.

This weekend we made nam prik nuum (it's sort of a northern chili relish) with the massive amount of green chilies we had from our garden. Because they were too spicy to be edible in large amounts, I cut out the seeds and roasted them until black on the outside, put that in a food processor with garlic, shallot, palm sugar, fish sauce, and some lime juice. Its great with cucumbers, green eggplants, or my favorite, pork rinds.

I have the green mango salad Nan makes too. Like ti too. But my favorite thai dish is by far panag moo. I don't know why. Although fried pork with garlic and sticky rice is the bomb too. :D

Somtom balat... the stinky sickening stuff.

My fam is part Lao on the moms side.. this is made daily at our house and is the stuff nightmares are made of.. a Lao favorite!

Bamboo seems to be a favorite as well. and when they cook it, I just want to puke. Nasty, nasty.

And how about that cow stomach they can't get enough of.. even my dog, Moowan loves it.

My front patio is covered with stinky #### fish drying in the sun to make more balat. Flies everywhere ( good thing I have those hand made water bottle fly traps my uncle likes to make after he's shitfaced..)

At my house...if it crawls, it's eaten.

After living in the jungle for the last 5 years, a good burger w/ fries is a nice thing although the closest burger place is over an hour away... and Mexican food ( a drive to Pattaya for some Mike's, and I hate Pattaya ) after all, I am an Arizona native.

I do have to admit my wife makes the best penang gai in all of the Realm! B-)
