The Consulate has the complete I-129F that you originally filed with USCIS (it is forwarded by NVC). However, most likely 4-6 moths+ will have passed since you submitted the original package to CSC or VSC and you'll need a letter of employment dated close to your interview date.

Employment letters, I-134A's, Taxes and the such are not required at the time you submit your petition - just at the interview stage. Make sure to supply 3-4 recent paycheck stubs at interview time.

I sent my employer form original with my K-1 packet. Will I need another one for the consular interview in UK or will they have a copy of that one in with the paperwork?

You will need another.

NEVER send originals, make copies (many) and send a copy. You or your fiancee can have an original AT the interview if it is requested.
