Travel to interview (Mexico)

My plan is to fly my fiance from Monterrey to Dallas, then to El Paso, then cross into Mexico, at the interview they will take her B2 Visa and her Mexican passport.

Is there any way, at all, to while the visa is being processed to fly her back out of El Paso in the reverse direction or will she have to fly via Juarez to Monterrey on a Mexican airline?

someone can correct me if I'm wrong, but I don't think she can cross into the US after they take her B2 visa and before they give her the K1.. She won't even have a passport to show them..

There is NO way she can enter the US without a visa! She will have to fly within Mexico.
