As our interview draws near, I am somewhat worried, please give me your thoughts.

I am currently pursuing a k1 for my fiancé in the Dominican Republic. We meet October 2009 had a courtship and began our k1 process in November 2010.

Prior to this, in 2007 I was married to a Jamaican citizens. We meet in the US; he had come under a work visa (we meet after this). We underwent an AOS in 2008 where he attained his residence, but subsequently divorced in September 2010, after being separated for over a year (Requirement in the State of NY).

My concern is the 2 petitions for residency, has anyone heard of a similar story in the DR, what was the outcome?

There is a limit of two K-1 visa petitions and you would require a waiver for any beyond that, but in your case you didn't file a visa petition for the first marriage and your ex was already here so I don't see it as a big issue. Along with the EOR letter for your current fiance, write a letter regarding your previous marriage. How you met, why divorced, be sure to mention that he was already in the US and as a result of a petition from you (they will already know this anyway). Only problems I can see is if the previous spouse had any immigration related issues that might reflect on you, but otherwise just have all your evidence dot the I's and cross the T's and take a big dose of patience to get through this process.

I read about a denied fiance visa petition in the "Dominicans to the USA" website where they said that it was for immigration purposes only and they seemed suspicious that this was her second sponsorship (the petitioner had divorced her also Jaimaican ex-husband, if I recall correctly). All I can say is that you cannot change the facts; it is what it is. Instead, try to focus your energy on positive thoughts and make sure you take with you all sorts of proof to the interview. As you have heard many times, every case is different and your previous sponsorship may not necessarily mean that they will deny your fiance's visa.
