Hi,

I am having a difficult time figuring out if my assets alone will suffice for these forms, due to the nature of my bonds.

My question is, can I have my father co-sponsor my fiancée as a back-up? May or may not be needed, but there in case?

I am not sure how they look upon that, but if I were to submit a co-sponsor, even if not needed, what happens?

Yes, you can have your father as a co-sponsor( I am not sure about Japan, whether they allow co-sponsors! I think they do, the only consulates that do not allow co-sponsors are HCMC, Vietnam and Manila, Phillipines). I do not see any problems if you submit a co-sponsor, they will not look at your case any differently.
